Biryani Masala Powder (in Microwave)

Masala is the blend of different spices and herbs mixed together in a dissimilar proportions. It is used extensively in Indian cooking. An Indian meal is not complete particularly without Indian spices. For years, masala has been added to flavor the food. The aroma of the Indian spices makes the Indian food hot, spicy as well as tempting. These spices are collected mainly from plants and they are a good source of vitamins and minerals. Not only these are used in Indian cuisine, rather also used in medicines and preservatives too.

The grounded masala have been used in India since ancient times. Also every region of this Indian subcontinent has its own flavors of masala. A varieties of grounded masala are used every day in all Indian households. And the freshly grounded masala has a strong fragrance as compared to any other. The homemade ones are so healthy and hygienic. Well Monday is here again, so the Foodie Monday Blog Hop team has come up with a theme as ‘Dry Masala Powder’. I have prepared the Biryani Masala Powder for theme contribution. 

Like others, I was preferring also to buy the masala powder for the preparation of any variety of biryani. But from some days before, I just started using this homemade one which is full of aromas. Always, there is a huge difference in flavor of homemade and store bought masala. Well, for preparing this biryani masala powder I just first roast the spices in microwave and then grind to a smooth texture powder. 

Instead of microwave, the roasting part can be done in stove top or the spices can be simply dried fully under direct sunlight. For drying in sunlight, put all the spices in a large plate spreading evenly. Then cover the plate by thin muslin cloth and keep under sunlight (in daytime 😉) for up to 3-4 days. Then grind to get the powder. Just a sprinkle of this biryani masala powder will surely enhance the taste of the whole dish. Caraway seed (shah jeera)

2 tbsp

Whole black pepper

2 tbsp

Clove

Green cardamom

Black cardamom

Star anise

Mace (javitri)

Nutmeg (small)

1 no

Bay leaf

3-4 no


Method :

  1. In a plate take each spice one at a time and thoroughly check for any presence of impurities. If any found, then discard those impurities.
  2. Now roughly crush the nutmeg and keep aside.
  3. Then in a baking tray (clean and dry), take all the cleaned spices along with roughly crushed nutmeg and spread evenly.
  4. Roast them in microwave for 2 minutes or till a nice aroma of spices come out. 
  5. Take out the baking tray from microwave and allow to cool down completely.
  6. Now put all the roasted spices into a clean & dry blender jar and make a powder of fine texture.
  7. Sieve the biryani masala powder and store in an air tight container for use later !!

Notes :

  • I always like the tiny bits in the powder, so dont prefer to sieve the powder after grinding.
