Baby potato fry is a very quick and easy recipe. This can done by using normal potatoes. Just boil the normal potato and then slice into 2 or 4 piece depending upon the size of normal potato. But I prefer to use the baby ones. 



These fries taste awesome taste. If you are not in a mood of cooking, then you can go with this simple baby potato fry dish. Also in kid’s lunch box, these can be a best side dish with phulka.

a super easy and quick side dish using some baby potatoes or even some potato cubes

Ingredients:

  • Baby potato (boiled & peeled) 15-16 no.
  • Sambar powder 1.5 tsp
  • Garam masala 1 tsp
  • Kasoori methi 1-2 tsp
  • Cumin powder 1/4 tsp
  • Mustard seeds 1/4 tsp
  • Coriander leaves as needed
  • Oil 1 tbsp
  • Salt as needed

Instructions:

  1. In a mixing bowl take the boiled potatoes along with sambar powder, garam masala, cumin powder, kasoori methi, salt.
  2. Mix well and keep aside.
  3. In a non stick pan, heat oil.
  4. When oil is hot enough, put the mustard seeds and allow to crackle.
  5. Add in all the baby potatoes coated with spices and fry over medium heat for 10-15 minutes or till becomes golden brown in color.
  6. Add the chopped coriander leaves and mix.
  7. Turn off heat and serve hot with phulka or any rice dish !

Notes:

Kasoori methi (dried fenugreek leaves) will also enhance the flavor. So don’t skip that.
Non stick pan is recommended, otherwise potatoes’ll stick to pan while frying.
Rice flour can be added to give a crunchiness. Just add 1 tsp of rice flour to the boiled potato along with spice powders. I have not added.
