I placed everything in one kadhai, mixed it all with my hands, covered it and walked away. What came out was a soft, fragrant and truly homestyle Aloo Gobi that tasted like it had taken time and effort, even though it hardly did. Since then, this lazy-day version has become a regular in my kitchen. It’s perfect for busy mornings, slow evenings or those moments when you want comfort without the work.

  • Keep the heat low so the vegetables don’t catch at the bottom.
  • If your kadhai has a tight lid, the steam will stay inside and help the dish cook faster.

  • If the cauliflower is very fresh and tender, reduce cooking time slightly.

Ingredients
  

  • 2 medium potatoes peeled and cubed
  • 2 cups cauliflower florets
  • 1 medium onion roughly chopped
  • 1 medium tomato chopped
  • 1 teaspoon ginger crushed
  • 1 teaspoon garlic crushed
  • 1 green chilli slit
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder adjust as needed
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander for garnish

Instructions
 

  • Add the potatoes, cauliflower, onion, tomato, ginger, garlic and green chilli to a kadhai.
  • Sprinkle turmeric, red chilli powder, coriander powder, garam masala and salt.
  • Drizzle oil and mix everything well so the vegetables are coated evenly.
  • Cover and cook on low heat. The vegetables will release moisture and begin to soften.
  • Open the lid once or twice and give a gentle mix.
  • Cook until the potatoes and cauliflower turn soft and the masala blends well.
  • Finish with chopped coriander and serve warm.

Notes

  • Slow cooking on low heat gives the best texture.
  • Extra water is usually not needed. If your cauliflower is dry, add one or two spoons.
  • Keep it covered through the cooking process so the steam helps cook the vegetables.
  • Add lemon juice or crushed kasuri methi at the end to brighten the flavour.
