Cuisine Indian
2 medium potatoes peeled and cubed 2 cups cauliflower florets 1 medium onion roughly chopped 1 medium tomato chopped 1 teaspoon ginger crushed 1 teaspoon garlic crushed 1 green chilli slit ½ teaspoon turmeric powder 1 teaspoon red chilli powder adjust as needed 1 teaspoon coriander powder ½ teaspoon garam masala Salt to taste 2 tablespoons oil Fresh coriander for garnish
Add the potatoes, cauliflower, onion, tomato, ginger, garlic and green chilli to a kadhai.
Sprinkle turmeric, red chilli powder, coriander powder, garam masala and salt.
Drizzle oil and mix everything well so the vegetables are coated evenly.
Cover and cook on low heat. The vegetables will release moisture and begin to soften.
Open the lid once or twice and give a gentle mix.
Cook until the potatoes and cauliflower turn soft and the masala blends well.
Finish with chopped coriander and serve warm.
Slow cooking on low heat gives the best texture.
Extra water is usually not needed. If your cauliflower is dry, add one or two spoons.
Keep it covered through the cooking process so the steam helps cook the vegetables.
Add lemon juice or crushed kasuri methi at the end to brighten the flavour.
