Quinoa Patties (VEGAN & Gluten free)

In India, festive time is coming up soon which is an exciting time for many reasons. One of the main ones being binging on traditional sweets and savory snacks showered by relatives and friends. But at the same time, it becomes a matter of how to burn those extra calories. When picking healthy snacks to promote weight loss, one must look for high fiber and protein to help us stay fuller longer. These kind of snacks will surely sustain us for hours without wrecking our calorie intake for the day. Well, here the quinoa patties are perfectly fit for those category as quinoa is high in both protein and fiber.

Quinoa has gained immense popularity these days as it is the new favorite among weight watchers and health enthusiasts. Most of us have this misconception that quinoa is a grain. Quinoa is not a grain but a pseudo cereal. It is cooked like grain and also has similar properties. 

Quinoa is loaded with protein, which makes it perfect for people who are trying to cut those extra kilos. It also has all the essential amino acids required by the body. Moreover, it is gluten-free which makes it a good option for people who are allergic to gluten. 

How to cook this pseudo cereal, Quinoa ?


Quinoa is coated in naturally occurring insecticides called saponins. These can give the grain a bitter taste and make it difficult to digest too. So it is always advice to rinse quinoa few times in a fine mesh strainer before proceeding for cooking. Next is the step of cooking the quinoa and for that, one just need quinoa and water ! The water ratio play the vital role here. 

To get nice and fluffy cooked quinoa,keep the quinoa to water ratio as 1:2

So take water and quinoa in a pan. Cook uncovered until the quinoa has absorbed all the water over low-medium heat. Here, the cooking time will vary based on quantity. Once the water is all absorbed, turn off the heat. Cover the pan and let the quinoa steam for 5 minutes keeping aside. That’s all ! perfectly fluffy quinoa is ready to use.

One has endless options for using the quinoa in diet. Simply toss into a salad or use as a stuffing or make soup, it pairs so nicely with sweet and savory flavors as it has a neutral taste.

Making procedure of the Quinoa Patties :

In these patties, I have used some vegetables along with quinoa. The vegetables used here are totally depend upon individual choice. So select accordingly. I have used potato, carrot, bell pepper and sweet corn. 

So to make the patties, first heat oil in a pan and add cumin seeds. When the seeds starts spluttering, add grated ginger and chopped green chilies. Sauté a bit and then add grated carrot, chopped bell pepper, sweetcorn (boiled). Add garam masala, coriander powder, amchur powder, turmeric powder and mix everything well. Sauté for 1-2 minutes and turn off heat. Allow the mixture to cool down completely.

Then in a mixing bowl take this cooled mixture, boiled potatoes, cooked quinoa and corn flour. Mash everything first and then start mixing using a spoon till everything incorporated well. Take 2 tbsp of mixture at a time and shape like patty. 

Now heat oil in a frying pan. Place the patties into the pan, keeping space in between. Cook these from both the sides until nicely brown, flipping in between. Transfer these quinoa patties into a serving platter and serve hot with any desirable chutney !

    The slightly crisp and delicious patties are perfect appetizer or side dish. 

    These can be served warm over salads, in pitas, layer into a sandwich and lots more choices.


    Can these be prepared ahead of time ?

      yes, one can make a batch of these patties and simply freeze in an air-tight container. Just before serving, reheat in microwave and these are all ready to serve !

          Ingredients

          • Quinoa (cooked) 2/3 cup
          • Potatoes (boiled) 2 no.

          • Amchur powder 1/2 tsp
          • Corn flour 1 tbsp
          • Salt as needed
          • Oil as needed

          10. Wet the palm, take 2 tbsp of mixture at a time and shape like patty.

          12. Place the patties over the pan, keeping space in between.
          13. Cook these from both the sides until nicely brown, flipping in between.
          14. Transfer these quinoa patties into a serving platter and serve hot with any desirable chutney !

          Notes:

          The vegetables used here are totally depend upon individual choice. So select accordingly. I have used potato, carrot, bell pepper and sweet corn.
          Adjust spiciness (no. of of green chili here) as desired.
