Carrot Halwa Ice Cream (dairy free) | Gajar Halwa Ice Cream (dairy free)

Carrot halwa or gajar ka halwa is the most popular sweet dessert pudding in India. This is made during the festivals like diwali, raksha bandhan in most of the Indian houses. It is a must-delight during the winters since the tender and juicy red carrots are easily available in those seasons. Traditionally, this dessert is prepared by cooking the shredded carrots in milk, sugar, fried nuts and ghee until soft and finally flavored with cardamom powder. Now-a-days, gajar ka halwa is a popular worldwide dessert with a lot of variations. 

 

Here I have come up with the frozen version of this popular dessert which is flavorful as well as tasty. Originally I decided to make the Popsicle using it, but suddenly changed my mind and made the carrot halwa ice cream or gajar halwa ice cream which is dairy free too. I have used full fat coconut milk in this recipe. So lets go in details method of preparation as described below step by step.

Carrot (shredded)

2 & ½ cup

Coconut milk (full fat)

2 & ½ cup (600 ml)

Water

1 cup

Cardamom powder

1 tsp

Cashew

8-10 no.

Pistachio

6-8 no.

Sugar

½ cup

Vanilla essence

3 tsp

Salt

¼ tsp

Method :

  1. Chopped finely cashews and pistachios. Keep aside.
  2. Mix shredded carrot, coconut milk, water in a thick bottom pan. On a low to medium flame, bring the whole mixture to a boil and then simmer.
  3. The mixture’ll start to reduce a bit. 
  4. Then add sugar, cardamom powder and chopped pistachios, cashews. Stir well and continue to simmer.
  5. Stir the whole mixture in between. The liquid’ll reduce and thicken.
  6. Switch off the flame and keep aside to cool the mixture completely.
  7. Transfer mixture into a freezer-safe container, layer the surface of the mixture with parchment paper. Press gently and seal the container with lid. 
  8. Freeze for at least 4 hours or overnight until it is firm.
  9. While serving take out of the refrigerator, scoop out to a serving bowl and serve !


Notes :

  • If you have fresh red carrots, then the ice cream tastes amazing.
  • Amount of carrot can be a little more or less.
