Melt-in-mouth fudge prepared using seasonal grated carrot (red ones)
Having seasonal food is important for a particular reason. And I most of the time prefer to follow this. Winter and carrots are one of that kind. And with carrots we, Indians mostly make the much popular north Indian sweet, Gajar ka Halwa aka Gajrela. Basically this is like a pudding prepared by grated carrots, milk, sugar and cardamom powder. I have already shared an Ice Cream using this gajar ka halwa which is completely dairy free, means Vegan. Do check.
Today again I am going to share another dish using this gajar ka halwa (with slight changes) as Gajar Burfi / Carrot Fudge. The grated carrots are first fried in ghee and then allowed to cook in milk and milk powder mixture. Next sugar is added and the whole mixture starts to loosen and some bubbling will form. And this state gets over after sometime while stirring continuously. Finally when the whole mixture thickens and starts to leave the side of the pan, the cardamom powder is mixed. The heat is also turned off then after tasting this process : “Take a small amount of mixture and cool it. Then roll into a small ball & it should easily form a ball which indicates to switch off the flame right away.” The mixture is transferred to a greased plate, flattened and then few chopped pistachios are sprinkled on top. Using a sharp knife, the flattened mixture is cut into desired shapes.
The ball taste is mandatory to get the right consistency of the burfi. Else it will become either very soft or very hard. So apart fro that part, other steps are quite simple and easy here. During winter this dish one should make and serve as a sweet just after any meal. For party dessert option also this suits very well. The carrot fudge is completely gluten free. One can use the coconut milk or any other plant based milk to keep this sweet Vegan too. The consistency of this burfi is little thicker as compared to the traditional gajar halwa. So if you are making gajar halwa then just cook for little more time and then only these burfis can be achieved with proper shapes. The color of this dish (due to use of the seasonal red carrots) are really an eye-catchy. Neither condensed milk nor pressure cooker is used here. So do try surely !

Melt in mouth fudge prepared using seasonal grated carrot
- Carrot (grated) 3 cup
- Milk 1/4 cup
- Milk powder 1/2 cup
- Sugar 1/2 cup
- Cardamom powder 1/2 tsp
- Ghee 2 tbsp + 1/2 tsp
- Pistachios (finely chopped) 2 tbsp
How to cook Carrot Burfi / Gajar Burfi / Carrot Fudge (Gluten free)
- Grease a pan or tray with 1/2 tsp ghee and keep aside.
- Then in a thick bottomed pan, melt 2 tbsp ghee & add the grated carrots.
- Over low to medium heat saute the carrots with frequent stirring for 8-10 minutes.
- Meanwhile in a bowl take milk powder, milk and mix until there is no lumps.
- After 10 minutes, add milk powder mixture.
- Mix well and allow to cook again for 1 minute.
- Next add sugar and after mixing, the whole mixture starts to loosen and one can see the bubbling.
- Keep stirring till the whole mixture thickens and starts to leave the side of the pan.
- Add the cardamom powder and mix everything well.
- Turn off heat (always try the ball test method before switching off, check NOTE just below the method of preparation to get details) and immediately transfer the mixture onto the greased pan.
- Using a flat spatula, press firmly the top part to get a even layer first.
- Then sprinkle finely chopped pistachios on top and gently press them again.
- Keep aside and allow to cool down a bit.
- When it is still warm, using a sharp knife cut into to any desired shape.
- Allow to cool down completely, separate each piece.
- Either serve immediately or store in an air tight container to serve later !
Any dry fruits like cashews, almonds, raisins etc can be taken instead of pistachios.
Take a small amount of mixture and cool it. Then roll into a small ball & it should easily form a ball which indicates to switch off the flame right away.
Prefer to use a very fine grater for grating carrot so that whole process will take less time as compared to use grated carrots though a big grater.
Some grated coconuts can be added along with grated carrots to the ghee. I have skipped that addition.
