Eggless Peanut Cookies

Peanut or groundnut or monkey nut are small, oval shaped nuts and pink in color. Due to its high oil content, this is also highly used in Indian kitchens. The seeds are crunchy as well as flavorful. The name also varies in different parts of India like it is called moongphali in Hindi, chinabadam in Odia, verkadalai in Tamil etc. The mixture of healthful fats, protein and fiber in peanuts indicate that these provide nutritional benefits and make anyone feel fuller for longer. For this reasons, the peanuts are a healthy go-to snack when people compare with chips, crackers, even other simple carbohydrate foods. 

Culinary uses of these small nuts, Peanut :

These nuts can be eaten raw, boiled, soaked or even roasted. These are nutty, yet pleasantly sweet in taste. Roasted and crushed kernels are often sprinkled over salads, desserts etc. Peanut butter is a food paste prepared from the roasted peanuts, with or without the addition of oil. It is popular throughout the world and commonly used as spread / dip (will make a post for this butter soon). Peanut chutney is a most common South Indian dip and made using peanuts, chili, salt, garlic and tempered with mustard seeds. This is often served with dosa, idli in south Indian cuisine. Peanut oil is also an aromatic oil which is often used for seasoning in many Indian dishes or even for deep frying.

Well, today I have come up with a baked dish using peanuts as Eggless Peanut Cookies.



NO SPECIAL BAKING SKILLS OR TOOLS are REQUIRED !

These cookies do not require any special equipment or baking tools, not even a whisk. A simple spoon / spatula does the work. This cookie recipe is quite simple and easy. No need of resting the dough is here, simply make the dough, shape as cookies and bake !

Making the cookies in details :

In a mixing bowl all the powdered sugar along with melted ghee are mixed well. Then to that bowl, wheat flour, gram flour, baking powder and cardamom powder are sifted through a sieve. Using a spatula or even using fingers all are mixed well. Then some roughly crushed peanuts are added and everything is again mixed and tried to make soft dough. In the beginning it seems bit crumbly texture, so add 1 tbsp of milk at a time and try to make a smooth and soft dough. Then small portions of 1 tbsp dough are picked and shaped like balls and placed over a baking tray lined with parchment paper. In a preheated oven these are baked at 180 deg C for 18-20 minutes or until light golden in color. Those are then transfer to a cooling rack and allowed to cool down completely. These cookies are bit fragile when hot and just out of the oven. And these turn little hard after cooling down completely. After that these can be stored in an air tight container to use later.

These cookies are so tender and literally melt in the mouth kind. One may opt for all-purpose flour instead of wheat flour here too. A perfect crumbly texture these have after baking. The roughly crushed peanuts surely give a nice crunch in each bite. If you are in a mood to make some cookies, then this is the super simple and easy one you must try. With just easily available pantry ingredients, these cookies will be ready within minutes. No eggs are used here. The cardamom powder gives a much aromatic flavor to the whole cookies. Make a batch and keep it in an air-tight container which will be a perfect pair with a cup of tea or coffee.

Ingredients:

  • Wheat Flour 1 cup
  • Gram Flour (besan) 1/2 cup
  • Melted ghee / butter 1/2 cup
  • Powdered Sugar 1/2 cup
  • Crushed peanut 3-4 tbsp
  • Baking powder 1/4 tsp
  • Cardamom Powder 1/2 tsp
  • Milk 2-3 tbsp
  • Whole peanut (for garnishing) few

Instructions:

  1. Preheat the oven at 180 deg C and line the baking tray with parchment paper. Keep aside.
  2. In a mixing bowl take powdered sugar, melted ghee and mix well.
  3. Next to the same bowl sift wheat flour, gram flour, baking powder and cardamom powder.
  4. Using a spatula mix and fold well.
  5. Add the roughly crushed peanuts and mix again.
  6. Make a soft dough. It may seem bit crumbly in texture so add little amount of milk at a time and make the dough.
  7. Take 1 tbsp of the dough and shape in to a ball (try to make ball without much cracks).
  8. Similarly make balls from rest of the dough, place all the dough balls 1-inch apart from each other on the baking tray.
  9. Place a peanut on top of each ball, press gently and finally bake at 180 deg C for 18-20 minutes or until light golden in color.
  10. Take out the baking tray from the oven and allow to cool down completely.
  11. Store in an air tight container and serve when needed !

Notes:

Add milk little by little, else there will be a mess.
Until a soft dough is not formed, add 1 tbsp of milk and check and then add again if not forming.
Cardamom powder gives a nice aroma to these cookies, so do not skip.
Always keep some space in between the cookies in the baking tray. These tend to expand while baking.
To make sugar powder, grind regular white granulated sugar in a mixer with few seconds interval.
These cookies are bit fragile when hot and just out of the oven. And these turn little hard after cooling down completely.
