The February month challenge in the ‘Shhhhh Cooking Secretly Challenge’ group was ‘Post Pregnancy Food’, suggested by Aruna. Well, I was partnered with Preethi Prasad for this theme, she gave me 2 secret ingredients Dalia and Cardamom, and I gave her the secret ingredients Dry ginger and Cumin seeds. And, as usual, using my two ingredients I have come up with this Dalia Kheer for the theme contribution.

Ingredients
  

For Rice:

  • 2 cup Basmati rice
  • 1 no. Bay Leaf
  • 4-5 no. Clove
  • 1 no. Green cardamom
  • 1 inch Cinnamon stick
  • 1 no. Mace (javitri)
  • Salt as needed
  • 1 tsp Oil
  • Mint leaf few

For Marination :

  • 1 cup Potato (cubes)
  • 1 cup Cauliflower (medium floret)
  • ½ cup Bean (1 inch long)
  • ½ cup Carrot (cube)
  • ½ cup Green pea
  • 2 no. Green chili
  • ¾ cup Yogurt
  • 2 tbsp Ginger garlic paste
  • 2 tbsp Biryani powder
  • 2 tsp Coriander powder
  • ¼ tsp Turmeric powder
  • Mint leaf (roughly chopped) small bunch
  • Coriander leaf (roughly chopped) small bunch
  • 2 tbsp Kasooori methi (dried fenugreek leaf)
  • 2 tbsp Fried onion (barista)
  • Salt as needed

Others –

  • 2 tbsp Cashew
  • 2 tbsp Raisin
  • 1 inch Cinnamon stick
  • 4 no. Clove
  • 1 no. Black cardamom
  • 1 no. Bay leaf
  • ½ tsp Black Cumin Seeds (Shahi Jeera)
  • Fried onion (barista) for sprinkling
  • Biryani powder for sprinkling
  • ½ tsp Saffron
  • 2 tbsp Milk
  • 1 tbsp Oil
  • 2 tbsp Ghee

Instructions
 

  • First soak saffron in 2 tbsp of milk and set aside.

Marination –

  • In a bowl, take ginger-garlic paste, coriander powder, turmeric powder, biryani powder, salt and mix well.
  • Then add potato cubes, cauliflower florets, green peas, beans, carrot cubes, green chilies, mint and coriander leaves, kasoori methi, yogurt.
  • Mix everything well, cover the bowl and allow to marinate.

Rice preparation –

  • Washed the rice with regular water and then soaked with enough water for 30-35 minutes.
  • Then boil water in a pot upto rolling boil and add cinnamon stick, bay leaf, cloves, green cardamom, mace (javitri), oil, salt, few mint leaves along with soaked rice.
  • Give a nice stir and allow to cook the rice till 80% done.
  • Strain and keep aside to cool.

Biryani Preparation –

  • In a heavy bottom pan, heat oil and fry the cashews, raisins until golden brown. Remove them onto a plate and keep aside.
  • Into the same pan, add black cumin seeds and allow to sizzle.
  • Add cinnamon stick, bay leaf, cloves, black cardamom.
  • Add marinated vegetables and mix thoroughly.
  • Cover the pan and cook until the veggies are 80-85% cooked. Do not overcook.
  • Turn off heat and take half of the veggie to a plate.
  • Now spread half of the cooked rice evenly over the rest veggie in the pan.
  • Sprinkle some biryani powder over the rice.
  • Layer rest of the veggie over the rice evenly and sprinkle fried onions on top.
  • Layer rest cooked rice over the veggies and sprinkle some more biryani powder.
  • Drizzle saffron milk over the rice along with ghee.
  • Put some more fried onions, fried cashews and raisins on top.
  • Cover the pan and place over a hot tawa or griddle.
  • Allow to cook for 25-30 minutes over low heat in dum process.
  • Turn off heat and allow to cool for 10 minutes.
  • Then gently fluff the biryani and serve along with any raita of your choice !

Notes

  • Do not overcook the rice and the vegetables as they will be cooked again in the dum process. Else there will be a mesh at the end.
  • Choose the vegetables as per choice.
  • Adjust the spiciness (here main spicy factor is the biryani masala powder) as desired.
