Today is Diwali, the festival of light. I am wishing all my viewer here a very Happy Diwali !! May the divine light of Diwali spread into your life and bring piece, happiness, prosperity too.

Diwali is one of the most ancient festivals of India and is celebrated around the country with much fervor. People perform pujas on this day, dress up and indulge in a delicious feast. I hope you all have planned well for the celebration too. In addition to that here I have come up with a unique and eye-catchy dessertGulabi Khira GainthaorRice Dumplings in Rose Flavored Milk. I can assure you that this pinkish dessert will surely beautify the celebration much more.

What is the Khira Gaintha ?

Khira gaintha is a traditional odia sweet dish which consists of rice flour dumplings cooked in cardamom flavored milk. Usually these rice flour dumplings are stuffed with some coconut-jaggery mixture and sometime there is no stuffing used to make the dish too. There is also another variations people follow to make this dessert. Some add the dumplings directly to the boiling milk to steam, some other first steam the dumplings and then add to the boiling milk. I personally prefer to first steam the dumplings and then add to the boiling milk.

What is the twist here to the traditional one ?


The twist here is the rose flavor. And that comes from the use of rose petal jam aka gulkand, roohafza and rose petals. Gulkand can be store bought / homemade too. I have used some freshly prepared gulkand at home which I will share in details in another post.

    Making procedure of this dessert :

    First in a deep pan take water along with salt and start boiling. Gradually add rice flour to the boiling water. Stir continuously to avoid any lumps being formed. Keep the flame on low, cover the pan with a lid and cook for 5 minutes. Next turn off heat, transfer the dough to a plate and allow to cool.

    Meanwhile, mix well grated coconut and gulkand in a bowl. This is the stuffing for the khira gaintha. Keep aside.

    Now knead the cooled dough with ghee so that the dough becomes more softer. Next take 1 tsp of soft dough in palm, flatten a bit, put 1/4 tsp stuffing at center and then shape the dough as a ball (around 1/2 inch size). Similarly make balls out of the soft dough and steam all the stuffed balls.

    In another deep pan, heat the milk over low-medium heat. Add dry rose petals, sugar and mix well. When the milk starts to boil, add roohafza and mix. Then add all the steamed balls and simmer for 5-10 minutes or until milk thickens a bit and the balls look slightly pink in color. Add chopped dry fruits and gently give a mix. Turn off heat and the gulabi khira gaintha is ready !

    This is much perfect for any celebration time. As the Diwali time is here, so this twisted dessert will sure be an eye-catchy dish in menu. It tastes great when cold. So make ahead of time and keep in refrigerator till serving !

        Ingredients

        • Rice flour 1 cup
        • Milk 1 lt
        • Sugar 1/2 cup
        • Coconut (grated) 1/2 cup
        • Rose petal jam (gulkand) 3 tbsp
        • Roohafza 2-3 tbsp
        • Rose petal (dry) few
        • Dryfruits (finely chopped) few
        • Salt 1 pinch
        • Ghee 2 tbsp

        Instructions

        1. Take water in a deep pan along with salt and start boiling.
        2. Gradually add rice flour to the boiling water.
        3. Stir continuously to avoid any lumps being formed.
        4. Keep the flame on low, cover the pan with a lid and cook for 5 minutes.
        5. Turn off heat, transfer the dough to a plate and allow to cool.
        6. Meanwhile, take grated coconut and gulkand in a bowl.
        7. Mix well and keep aside the stuffing.
        8. Now knead the cooled dough with ghee so that the dough becomes more softer.
        9. Next take 1 tsp of soft dough in palm, flatten a bit, put 1/4 tsp stuffing at center and then shape the dough as a ball (around 1/2 inch size).
        10. Similarly make balls out of the soft dough and steam all the stuffed balls.
        11. In another deep pan, heat the milk over low-medium heat.
        12. Add dry rose petals, sugar and mix well.
        13. When the milk starts to boil, add roohafza and mix.
        14. Then add all the steamed balls and simmer for 5-10 minutes or until milk thickens a bit and the balls look slightly pink in color.
        15. Add chopped dry fruits and gently give a mix.
        16. Turn off heat and serve cold !

        Notes:

        I have used the homemade rice flour, check the recipe to make HOW TO MAKE RICE FLOUR AT HOME. You can use the store bought ones too.

        Add a paste of rice flour (1 tbsp rice flour and 1 tbsp water) to the boiling milk to thicken faster. I have not added.

        Stuffing part can be omitted, but enhances the rose flavor more.
