Sago Dahi Shot | Tapioca Pearl-Yogurt Shot (for Fasting Days)

Navratri !!


Navaratra / Navratra / Navratri is just celebrating in Indian subcontinent. Navaratri word has two parts - 'Nava' means nine, 'Ratri' means night; so this indicates nine nights. Navratri festival is celebrated twice a year, one is 'Chaitra Navratri' which comes in March/April and second one is 'Shardiya Navratri' which comes in September/October. As the sharad ritu (fall season) is going on, so the navratri is named as Shardiya Navratri. It is celebrated to worship Goddess Durga who killed demon king Mahishasura and other demons in a fierce battle. And this navratri is always celebrated with extreme passion by most of the Hindus.

The celebration varies from one state to another although the dedication and devotion remains the same all over India. Some people eat only fruits and drink milk during the entire nine days. Some refrain to use onion, garlic and non-veg foods during Navratri and eat only satvik food with is allowed during these fasting periods.




What is Sago Dahi Shot ?


Dahi Sabudana is a typical Maharashtrian recipe made during religious fasts. In that, sago is allowed to soak in dahi and then a tempering is added to the whole mixture. Well, the sago dahi shot is a twisted version of that dahi sago / sabudana.

Basically this is a drink which one can enjoy at room temperature or even chilled (put ice cubes / keep in refrigerator till serving)

Sago Dahi Shot completely falls under No Cook & No Oil Recipe category.

Sabudana is full of carbohydrate. So it makes anyone full for longer and provides enough energy. So one should consume it once during fasting time. During fasting, there is surely a container full of sabudana in my pantry.

What are the Ingredients needed to make this ?


⧫ Sago - 
Sago / sabudana / tapioca pearls are main ingredient. Any variety (small / large) will work perfectly here.

⧫ Yogurt -
Basically dahi is needed to make buttermilk here in which sago are allowed to soak. To make buttermilk, I have used 3/4 cup dahi and 3/4 cup water


Homemade Dahi








⧫ Cumin powder -
I have simply prepared a powder of few cumin seeds and used here. Roasted cumin powder works well too, do add if you wish.

⧫ Coriander leaf -
Add some finely chopped coriander leaves for that extra freshness.

⧫ Green chili - 
Spiciness totally depend upon individual choice, so add more or less green chilies. For kids, simply omit this addition.

⧫ Black salt - 
Add as needed. Rock salt also can be used here.

⧫ Water - 
Add this more / less to adjust the consistency of the drink (totally as desired).


The preparation of sago dahi shot in details -


In a mixing bowl first take 3/4 cup dahi, 3/4 cup water and mix well to get the buttermilk aka chaas. Next take the sago / sabudana in another bowl and wash, clean under regular water 2-3 times or till water appears clear. Put the sabudana into the buttermilk bowl and mix well. Cover and keep aside the bowl to soak sabudana at least for 3-4 hours. 

After soaking, the sago will be so soft in texture (that means mashing a sago ball in finger should be easily done). Next to this bowl add crushed green chilies, finely chopped coriander leaves, cumin powder, black salt and 1/2 cup water. Mix everything well, also adjust the consistency of the drink by adding water more as desired. Pour into serving glasses and serve as it is / even putting few ice cubes in it !

    What are the Serving suggestions ?


    Sago dahi shot takes hardly 1-2 minutes to make if the soaked sago / sabudana in buttermilk is ready. During festival time, one can make this ahead of time and enjoy through out the day. This spicy and savory drink one can enjoy chilled or even simply at room temperature.

      Few finely crushed peanuts can be added along with other ingredients. I have skipped that. Adjust the consistency of the drink by adding water more / less as desired. Spiciness totally depend upon individual choice, so add more or less. For kids, simply omit this addition.

      Quinoa Patties (VEGAN & Gluten free)

       

      healthy, gluten free and vegan patties using the super food, Quinoa and some vegetables




      In India, festive time is coming up soon which is an exciting time for many reasons. One of the main ones being binging on traditional sweets and savory snacks showered by relatives and friends. But at the same time, it becomes a matter of how to burn those extra calories. When picking healthy snacks to promote weight loss, one must look for high fiber and protein to help us stay fuller longer. These kind of snacks will surely sustain us for hours without wrecking our calorie intake for the day. Well, here the quinoa patties are perfectly fit for those category as quinoa is high in both protein and fiber.

      Quinoa !!!!


      Quinoa has gained immense popularity these days as it is the new favorite among weight watchers and health enthusiasts. Most of us have this misconception that quinoa is a grain. Quinoa is not a grain but a pseudo cereal. It is cooked like grain and also has similar properties. 

      Quinoa is loaded with protein, which makes it perfect for people who are trying to cut those extra kilos. It also has all the essential amino acids required by the body. Moreover, it is gluten-free which makes it a good option for people who are allergic to gluten. 

      How to cook this pseudo cereal, Quinoa ?


      Quinoa is coated in naturally occurring insecticides called saponins. These can give the grain a bitter taste and make it difficult to digest too. So it is always advice to rinse quinoa few times in a fine mesh strainer before proceeding for cooking. Next is the step of cooking the quinoa and for that, one just need quinoa and water ! The water ratio play the vital role here. 

      To get nice and fluffy cooked quinoa, keep the quinoa to water ratio as 1:2

      So take water and quinoa in a pan. Cook uncovered until the quinoa has absorbed all the water over low-medium heat. Here, the cooking time will vary based on quantity. Once the water is all absorbed, turn off the heat. Cover the pan and let the quinoa steam for 5 minutes keeping aside. That’s all ! perfectly fluffy quinoa is ready to use.

      One has endless options for using the quinoa in diet. Simply toss into a salad or use as a stuffing or make soup, it pairs so nicely with sweet and savory flavors as it has a neutral taste.

      Making procedure of the Quinoa Patties :


      In these patties, I have used some vegetables along with quinoa. The vegetables used here are totally depend upon individual choice. So select accordingly. I have used potato, carrot, bell pepper and sweet corn. 

      So to make the patties, first heat oil in a pan and add cumin seeds. When the seeds starts spluttering, add grated ginger and chopped green chilies. Sautรฉ a bit and then add grated carrot, chopped bell pepper, sweetcorn (boiled). Add garam masala, coriander powder, amchur powder, turmeric powder and mix everything well. Sautรฉ for 1-2 minutes and turn off heat. Allow the mixture to cool down completely.
      Then in a mixing bowl take this cooled mixture, boiled potatoes, cooked quinoa and corn flour. Mash everything first and then start mixing using a spoon till everything incorporated well. Take 2 tbsp of mixture at a time and shape like patty. 
      Now heat oil in a frying pan. Place the patties into the pan, keeping space in between. Cook these from both the sides until nicely brown, flipping in between. Transfer these quinoa patties into a serving platter and serve hot with any desirable chutney !

          yes, one can make a batch of these patties and simply freeze in an air-tight container. Just before serving, reheat in microwave and these are all ready to serve !

            • Corn flour 1 tbsp

            • Oil as needed

            Instructions

            1. Heat oil in a pan.
            2. Add cumin seeds and allow to splutter.
            3. Then add grated ginger and chopped green chilies.
            4. Sautรฉ a bit and then add grated carrot, chopped bell pepper, sweetcorn (boiled).
            5. Add garam masala, coriander powder, amchur powder, turmeric powder and mix everything well.
            6. Sautรฉ for 1-2 minutes and turn off heat.
            7. Allow the mixture to cool down completely.
            8. Then in a mixing bowl take this cooled mixture, boiled potatoes, cooked quinoa and corn flour.
            9. Mash everything first and then start mixing using a spoon till everything incorporated well.
            10. Wet the palm, take 2 tbsp of mixture at a time and shape like patty.
            11. Now heat oil in a nonstick frying pan.
            12. Place the patties over the pan, keeping space in between.
            13. Cook these from both the sides until nicely brown, flipping in between.
            14. Transfer these quinoa patties into a serving platter and serve hot with any desirable chutney !

            Notes:

            The vegetables used here are totally depend upon individual choice. So select accordingly. I have used potato, carrot, bell pepper and sweet corn. Adjust spiciness (no. of of green chili here) as desired.

            Foxnut Coconut Ladoo with Rose Flavor

            One of India’s biggest festivals is approaching. Navratri / Navaratra / Navaratri is going to start this year on 17th October and will continue till 25th October, so this is basically 9 days celebration. People all over the country celebrate this grand festival with great enthusiastic. From preparing delish dishes to wearing new clothes and enjoying Garba to keeping a fast, people celebrate the festival in several different ways. Well, the method and ways of celebrating is different in each part of India.

            In North and Western India, 9 days fasting or vrat is kept during the Navratri festival. In other parts of Eastern India like Bengal, Odisha etc. Navratra (basically 6th-9th day and one day after that too) is called as Durga Puja and is celebrated with much fanfare. In South India, fasting is not strictly observed. But food is prepared without the addition of onion and garlic. 

            Although the fasting varies from region to region, still most of the fasting recipes are very quick and easy to make. In addition to this, fasting foods are not only quicker to prepare but also easiest to digest. One can definitely say these periods are a good time to purify own body as well as mind. Today's post is all about a easy-peasy dessert ball ๐Ÿ‘‡

            Foxnut Coconut Ladoo that too with Rose Flavor ๐Ÿ˜Š


            yes, heard right ! foxnut aka makhana / puffed lotus seed and coconut both are used to make the ladoo here. And the ladoos are flavored with rose. The preparation method is super simple, easy and quick. It falls under Gluten free Dessert category too.




            Makhana and fasting days !!


            It is the only food among all the food during fasting, that is not just high in carbohydrate but also in protein.

            In India, makhanas are commonly consumed during fasting. These are aso known as puffed lotus seeds or foxnuts. The seed itself has a very neutral taste and takes on the flavours that are added to it. In addition to being an extremely popular ingredient in various recipes, fox nuts can also be used as a nutritional snack that one can munch on at any time of the day. Additionally, these have also been used for medical since medieval times as these contain several micronutrients that are extremely important for the human body. Consuming makhanas on a regular basis (rather than during fasting only) can prove extremely beneficial to any individual.

            Ingredients to make these ladoos -


            ⧫ Foxnut (makhana) - 
            I have used the raw ones. First I have roasted them and used in powder form to make the ladoos. If you have ready made roasted (either ghee roasted or plain roasted) ones, then simply make a coarse powder and use.

            ⧫ Coconut - 
            I have used freshly grated coconut here. If desiccated coconut is accessible, then use it without any roasting.

            ⧫ Dry fruits - 
            Pick any dry fruits like pistachio, cashews, almonds, raisins, walnuts etc. I have used only cashews and almonds.

            ⧫ Rose petals and rose essence - 
            Some dried rose petals I have added to the ladoos along with few drops of rose essence. If rose essence is not available then simply add pinch of cardamom powder.

            ⧫ Sugar - 
            The sweet factor comes from this ingredient in the ladoos.

            ⧫ Water - 
            Use to make the syrup along with sugar.

            ⧫ Ghee - 
            This is used for greasing the palms to avoid sticking while shaping the balls. One can also roast the makhanas with some ghee, I have dry roasted the makhanas.

                Well this time our fortnight foodie group named as Healthy Wellthy Cuisines is decided to select 94th theme : 'Navratra Fasting Recipes'. As the navartra is approaching so we all decided to make some festive dishes.                 Foxnut Coconut Ladoo with Rose Flavor

                easy and quick festive time ladoos using makhana (foxnuts), coconut and flavored with rose.

                Ingredients

                • Foxnut (makhana) 3.5 cup
                • Coconut (grated) 2/3 cup
                • Cashew 1/3 cup
                • Almond 1/3 cup
                • Rose petals (dry) 2 tbsp
                • Rose essence 1/2 tsp
                • Sugar 3/4 cup
                • Water 1/4 cup
                • Ghee 3-4 tsp

                Instructions

                1. In a pan dry roast the foxnuts / puffed lotus seed / makhana till perfectly crisp over low-medium heat.
                2. Transfer to a plate and allow to cool a bit.
                3. Meanwhile, take the grated coconut in the pan and fry for 1-2 minutes.
                4. Take out the coconut to a plate and add the nuts to the same pan.
                5. Dry roast them and transfer to the plate.
                6. Make a coarse powder of all the roasted makhana in a blender first and then the roasted nuts.
                7. Keep these powders in a plate.
                8. Now take sugar and water in the same pan and make a syrup ( no need of any string consistency in the syrup, just check for the sugar to be melted well).
                9. Turn off heat.
                10. Add rose essence along with the coarse powders, coconut, the roughly chopped dry rose petals and ghee.
                11. Mix everything well using a spatula and keep aside to cool a bit.
                12. When the mixture is still warm, start making the ladoos.
                13. Take 1-2 tbsp of mixture in palm and gather to make small ball shape (around 2 inch dia). Keep in a plate.
                14. Repeat the above process to make ladoos with remaining mixture.
                15. Serve or keep in air-tight container for later use !

                Notes:

                Along with rose essence, few pinch of cardamom powder can be added in these ladoos. Adjust the sweetness as desired. Pick any other dry fruits like pistachio, raisins, walnuts etc. Desiccated coconut can be used. In that case, add these directly to the mixture without frying.
