Matcha Energy Balls are so healthy balls made with just 5 simple ingredients. One can surely enjoy these power packed little balls of goodness.

Ingredients
  

  • 1 cup Desscicated Coconut
  • ½ cup Oats
  • 1 cup Medjool date
  • ¼ tsp Salt
  • tsp Matcha green tea powder + for rolling

Instructions
 

  • In a food processor, take oats and desiccated coconut and process until finely ground.
  • Then add the medjool dates and process until a dough is formed. Do not make a paste.
  • Now add salt and 2 tsp matcha, mix well.
  • Make balls as per the size desired and roll slightly over the extra matcha powder to soak up any moisture/stickiness (optional).
  • Store in an airtight container in the refrigerator for about a week.

Notes

  • Be sure to buy matcha green tea powder, not green tea powder. Matcha green tea is stronger and also much healthier.
  • Do not roll the balls over the matcha powder tightly to coat from all the sides, as the taste will be very bitter. Gently roll and take the balls out. Still, the step is completely optional.
  • One of the most common problems with these balls is that sometimes they aren't sticking together! If this is happening, then it is likely that the dates are not soft and sticky enough. In that case, simply soak the date in some hot water for a few minutes to rehydrate them. Then use in the recipe.
