Vada Pav consists of a deep fried potato ball coated with a batter placed inside a bread bun (pav) sliced almost in half through the middle. This is a popular Maharashtrian street food snack.

Ingredients
  

For Batata Vada (Coating)-

  • 1 cup Besan
  • ¼ tsp Turmeric powder
  • 1 pinch Baking soda
  • Salt as needed
  • Water as needed

For Batata Vada (Stuffing) -

  • 2 no. Potato (boiled and smashed)
  • 2-3 no. Green chili (crushed)
  • 5-6 no. Garlic clove (crushed)
  • 2 tbsp Peanut (fried)
  • ½ tsp Mustard seed
  • ¼ tsp Turmeric powder
  • 1 sprig Curry leaf
  • Salt as needed
  • 1 tsp Oil

For Batata Vada (Frying) -

  • Oil for deep frying

Others -

  • 6 no. Pav bun
  • Green chutney as needed
  • Tamarind chutney as needed
  • Peanut garlic chutney as needed
  • Green chili (fried) few

Instructions
 

For Batata Vada -

  • Heat oil in a pan.
  • Add mustard seeds and allow to splutter.
  • Then add curry leaves, crushed garlic and green chilies. Fry for a minute.
  • Turn off the heat and add the turmeric powder.
  • Give a mix and then add the fried peanuts, boiled and smashed potatoes, salt.
  • Mix everything well and allow to cool down completely.
  • In a mixing bowl, take besan, turmeric powder, salt and baking soda. Mix well.
  • Add water little by little to get a smooth batter. But, the batter should not be very thick or thin.
  • Heat oil in a deep pan for deep frying.
  • Now make balls with 2 tbsp of the stuffing at a time and keep in a plate.
  • Dip one ball at a time into the batter to coat well and then gently drop into the hot oil.
  • Drop few more balls to the oil, but dont overcrowd the pan.
  • Deep fry till golden from all the sides, and drain onto a plate lined with paper towels.
  • Similarly fry rest balls.

Assemble the Vada Pav -

  • Take one pav bun first and slit in half horizontally (leaving one edge joined).
  • Spread one side with tamarind Chutney, the other side with green chutney.
  • Then put some peanut-garlic chutney on both side and place one batata vada in the middle along with 1-2 fried whole green chilies.
  • Press down the whole bun gently and serve immediately by making some more vada pav like this !
