Chuin Aloo Besara (Potato and Drumsticks fry in a Mustard Paste Odia Style)

If you have drumsticks at home, then the chuin aloo besara (potato and drumsticks fry in a mustard paste odia style) is an easy and quick side dish with dal-rice combo. The veggie 'drumstick' due to high in calcium helps in building strong bones. Nutritionally also it is rich in vitamin A & C.
This dish goes very well with steamed rice. So do try this odia style potato and drumsticks fry in a mustard paste (chuin aloo besara) by following below step by step procedure.

Preparation Time : 30 mins      |      Cooking Time : 35 mins

Ingredients :

Potato (medium)
2 no.
5 no.
Mustard seeds
2 tbsp
Cumin seeds
1 tsp
Dry chilies
3 no.
Garlic cloves
6-7 no.
Turmeric powder
1 tsp
Panch phutan / phoron
1 tsp
Mustard oil
4 tbsp
As needed

​Method :
  1. Soak the mustard seeds, garlic, dry chili and cumin seeds in half a cup of water and keep aside for at least 15 mins.
  2. Take and wash all the drumsticks, peel off the outer layer and cut it into 3-4 inch pieces.
  3. Cut potatoes into thick slices (1/2 inch), keep aside along with drumsticks.
  4. Drain the soaked mustard seeds, garlic, dry chili and cumin seeds. Grind very well into a fine paste by adding a little water.
  5. Take a pan, heat the mustard oil. Add panch phoran & allow spluttering.
  6. Add potatoes along with turmeric powder and stir fry them for around 30 secs.
  7. Next add the drumsticks and fry for another 30 secs.
  8. Then add the ground paste and mix well until the vegetables are coated with it.
  9. Add 1 cup of water and salt. Cover and cook until the potatoes are cooked or till all the water dries out.
  10. Serve hot with rice-dal combo !

Notes :
  • The amount of mustard and cumin seeds is perfect for around 5 drumsticks. If the amount is increased, then there will be a bitterness in the dish.
  • Spiciness can be more / less.
