Poha Upma / Aval Upma / Vegetable Poha Upma / Vegetable Aval Upma

The poha upma recipe is actually a variation of vegetable upma, made with poha / flattend rice. It is quick to prepare and healthy, delicious too.
This quick dish can also be served as an evening snack / breakfast. Normally it is served with chutney / curd / pickle. It tastes divine by eating hot. The addition of choiceable veggies makes this poha / aval upma very colorful.  So here is the simple recipe to make a halthy poha / aval upma.

Ingredients :  
Poha / Aval2 cup
Potato (chopped finely)1 no.
Carrrot (chopped finely)1 no.
Green peas 1/4 cup
Green beans1/4 cup
Cumin seeds1 tsp
Peanuts1-2 tbsp
Red chili1 no.
Green chilies1-2 no.
Ginger (finely chopped)1/2 tsp
Curry leaves8-10 no.
Onion1 no.
Tomato1 no.
Turmeric powder1/2 tsp
Oil2 tbsp
Lemon juice2 tbsp
Water as needed
Saltas needed
Coriander leavesas needed
Method :
  1. Clean and wash poha / aval thoroughly in water for 2­-3 times. Drain off the water completely by putting in a colander / strainer for 10-15 minutes, set aside. All the moisture will be absorbed by the time. Break up the lumps if any and set aside.
  2. Heat oil in a pan. Add peanuts and shallow fry them for 1-2 minutes over low flame. Drain them and transfer to a plate.
  3. Add cumin seeds in same oil. When seeds begin to sputter then add finely chopped onion, chopped ginger, green chilies, red chili, curry leaves. Saute till the onions turn translucent.
  4. Add chopped tomatoes, turmeric powder, salt and mix well. Cook until tomatoes become soft for 2-3 minutes.
  5. Add the veggies (carrot, potato, green peas & green beans) and stir very well. Cover & let the veggies cook well.
  6. Then add the previously soaked poha. Stir and mix gently.
  7. Add shallow ­fried peanuts. Mix well & ensure that everything gets mixed evenly. Cover and cook on a low flame for 3-4 minutes.
  8. Lastly add lemon juice, chopped coriander leaves and mix gently.
  9. Serve poha / aval upma hot or warm with lemon pickle !

Notes :
  • If you are using the harder variety of poha / aval, then you need to soak them for a while. Then drain off and set aside.
  • Steam veggies can be added instead of adding directly with the tempering in the pan. 
  • Veggies can be omitted also.
